BBQ’d Mushrooms are great for breakfast with Sausages and eggs…
If your taking a small fry pan you can easily do an omellette. All you need is Eggs a little milk and whatever you would like in it…eg: spinach, ham, tomato, cheese etc…

Camping Breakfast Special
1 Lb. Bacon
1 Dozen Eggs
1 Pkg. Frozen Shredded Potatoes
8 Oz. Shredded Cheddar Cheese
Salt and Pepper
I use an electric frying pan but you can cook it in a regular pan. Brown bacon, drain some of the grease and leave some for cooking potatoes. Crumble bacon when done, leave in pan and add onions, peppers, tomatoes, etc. Cook potatoes till done, add salt and pepper. Break eggs on top of potatoes, put lid on pan. Cook eggs (fried) till done. Sprinkle with cheese until it melts. Cut a wedge, serve with toast. One pan clean up.
This recipe can feed up to a dozen people at once. Great for a camping breakfast

Camping Fun Pizza
8 oz. pizza or spaghetti sauce
1 lb Wheat bread
1/4 lb Mozzarella cheese
Pepperoni
Using the pie iron, take two slices of bread, put 1 1/2 tablespoons pizza sauce on one slice of bread. Top with Mozzarella cheese and sliced pepperoni. Place other side of bread on top and butter outer sides of bread. Put sandwich into pie iron and place in coals of fire. Cook until bread is toasted.
Banana Boat
1 Banana
Mini marshmallows
Chocolate chips
Raisins
Partially peel banana. Cut wedge-shaped section in banana. Remove wedge. Place in hollow: marshmallows, chocolate, and raisins. Cover mixture with banana peel and wrap in foil. Place in coals for about 5 minutes, until chocolate and marshmallows are melted.
Fried Rice for Campers
1 pk Precooked rice
2 c Boiling water
1 cn Spam -diced
1 Envelope fried rice-seasoning mix
Place rice in small bowl; pour boiling water over. Cover and let stand 5 minutes. Fluff with a fork. Mix in Spam and seasoning mix. Transfer mixture to medium skillet. Cook over medium heat 5 minutes, stirring often.

For breakfast, try pancakes (flapjacks), bacon, eggs, sausage.
For lunch you can have grilled ham and cheese or cheese and tomato sandwiches (grilled)
For lunch make spaghetti with meat sauce, sloppy joes, and of course, s’mores for dessert.
you need to get some pie irons, not only are they good for pies, you can make ham & cheese sandwiches,pizzas, turkey & swiss sandwiches.and so much more.
for breakfast i make up some filling for sausage burritos (at home) heat it up over the fire, throw it in a flour tortilla with some cheese and yummmmm !!!!

You can cook anything outside that you can in, it just takes practice.
Breakfast-cook pancakes and sausage and eggs. I eat a lot when camping.

Weiners cut up in baked beans with BBQ sauce.
Camp-fire stew, beef & vegetables cooked for an hour.
"Toad-in-the-hole"
Heat a large skillet with some cooking oil,
make a hole in a slice of bread with cup or glass.
Fry bread in skillet, break egg into centre hole.
When egg is firm, flip bread over & fry other side.
"French Toast"
Heat skillet with some cooking oil.
Mix one egg with 1/4 cup of milk per person.
Dip slice of bread in mixture to coat both sides.
Drop into hot oil in skillet, flip when browned.
Serve with pancake syrup or honey.
Or sprinkle with cinnamon & sugar.
Bacon & sausages cook well on fire or camp-stove.
Some favorites:
Southern Comfort Steaks – mix 1/2 cup Southern Comfort, 1 tbs steak seasoning spice, 1 cup steak or bbq sauce in a large zip lock and add steaks- marinade overnight or freeze and then cook over campfire
Campfire CousCous and Veggies
2 medium zucchini
4 tablespoons vegetable oil
1 medium garlic clove, thinly sliced
salt and pepper
3 cups dry couscous
4 1/2 cups water
1 thyme sprig
1/4 cup toasted pine nuts
3 tablespoons Zante currantsor raisins
Rinse zucchini, trim ends, and slice a 1/4-inch-thick slice. Cut each plank into 1/4-inch cubes (you should have 1/2 cup of diced zucchini; if camping, this can be done up to a day in advance).
Heat 2 tablespoons of the vegetable oil in a medium saucepan placed on a camping stove set to medium heat. Add garlic and season well with several pinches of salt and pepper mix. Cook, stirring occasionally, until garlic is softened but not browned.
Add couscous and stir to coat with oil. Cook, stirring frequently, until couscous is golden brown and toasted, about 5 minutes.
Add water and thyme sprig and bring to a simmer. Cover the pan and reduce heat to medium low; simmer until couscous is tender and water is absorbed. Remove from heat and stir in zucchini; return the lid to the pan. Allow to sit 5 minutes or until zucchini is tender.
Stir in pine nuts, currants, and remaining 2 tablespoons vegetable oil. Taste couscous and, if necessary, season with more salt and pepper mix.
Peach Mallows
peach halves (canned or fresh)
mini marshmallows
butter (optional)
cinnamon sprinkle
Fill peach halves with butter and marshmallows.
Sprinkle with cinnamon generously.
Wrap in tin foil and cook over campfire for 3-5 minutes.
*Favorite campfire toppings: chocolate chips, peanut butter chips, crushed Reese’s cups, crushed oreos, jimmies, coconut, M&Ms, nuts,… whatever your heart desires.
