I just need one good, simple camping recipe for a dinner dish. we decided on potatoes… but I really want to make something good… it’s like a camping date. Thanks.

Admin’s Answer:

I like one pan/skillet meals when camping.  Take along some refrigerated, browned ground beef, some chopped peppers of your choice (mild or hot), some browned onions.  Make a big pot of macaroni and cheese over the fire or on your cooking stove.  Add the refrigerated ingredients that you brought from home.

Warning:  This isn’t a health food, so bring along some raw finger vegetables (sliced cucumbers, carrots, celery and a yogurt dip) and fresh fruit.

How about a chicken recipe that you prepare at home?
(low cal, low sodium, low fat)

1 -2 pieces of chicken per person
(a white fish can be substtuted, but a small amount of margarine or oil will need to be put on fish, and cooking time is shorter)

(NOTE: if you are serving adults only, you might want to put 1 – 2 teaspoons of white wine in packet)

2-3 small red potatoes per person, quartered

    4-5 baby carrots per person

You can add onion or garlic if you like or use Garlic and Herb Mrs. Dash

1 square piece of heavy duty aluminum foil per person
(pull out of box piece as long as box is wide)

Place all items per person on foil, sprinkle liberally with G/H Mrs. Dash

Close foil packet and crimp edges

Your dinner is ready to place on fire and cook for about 30 – 45 minutes (depending on how hot fire is), until chicken juices are clear. Open foil packet and set directly on plate.

You can make dessert by coring apples, stuff core hole with raisins and sprinkle with cinnamon and sugar, or place one large marshmallow into core hole. Wrap each apple in foil and twist top. Put apples on to cook at same time as chicken, and allow to cook for approximately 45 minutes, until soft.

If you want to go all out, mix salad greens and place in zip lock bag (bring a tomato and cut into salad when ready to serve). Bring that salad dressing bottle that has just a bit left in the bottom (or put dressing in a small zip lock bag) and pour directly into zip lock bag of greens when ready to eat.

For a "campfire cooking" experience you can make bread on a stick. Make enough baking dough of Bisquick or Jifffy Mix (or equivalent) for each person and carry to camp in zip lock bag (remember to bring bags home and wash out to reuse). At camp, find stick (don’t use pine it will give th bread a "piney" taste) and peel off bark. Wrap dough around stick, and "toast" over fire.

    Bon Appetite

Did this frequently with my Girl Scouts!

OK, you need a camping pie iron. (they sell them at Wal-Mart or any outdoors kinda store for about $8). you can make apple pies over the fire, Romantic = Yes, Yummy = Yes, Simple to do = Yes
    To Make:
butter one side (2 slices) of your favorite bread
put butter side facing the metal
fill bread with apple pie filling (or cherry, whatever you want)
close the iron, and toast your pie for about 10 minutes over the fire. Guaranteed very fun and romantic. they are also so Delicious. link below for a picture.
P.S. you don’t have to make fruit pies, you can make stuff like a grill cheese with the iron too. Apple pie filling comes in a can, so its easy to bring camping. Good Luck, Have Fun, and use protection! :)

    beef stew and dumpling
    yummy!!!!!!!!

750g/1½lb shin of beef or stewing steak
    500g/1lb small onions, sliced
    40g/1½oz dripping
    1 tbsp flour
    900ml/1½ pint hot water
    salt and freshly ground pepper
    500g/1lb carrots, halved lengthways
    1 bay leaf(optional)
    For the dumplings:
    175g/6oz self-raising flour
    75g/3oz shredded suet
    1 tbsp parsley, finely chopped(optional)
    good pinch salt and pepper
    water, to mix

    Method
    1. Remove any gristle and surplus fat from the meat and trim into neat 4cm/1½in cubes.
    2. Fry the meat and onions in the dripping until lightly browned all over. Sprinkle in the flour and mix well. Gradually stir in the water and continue stirring until it boils. Season to taste.
    3. Cover and simmer very gently for 1 hour. Then add the carrots and bay leaf and simmer for a further hour, when it will be time to add the dumplings.
    4. To make the dumplings, sieve the flour into a bowl and add the suet, parsley, salt and pepper. Next add enough water to make a soft but not sticky dough, about 3 tbsp. Lightly flour your hands and roll the dough into eight small balls. Add to the stew and cook for a further 15-20 minutes.
    good for camping!!
