Your requirements:
Camping
Fishing
Flush Toilets
Showers
No Rangers
Intimate Setting
Sounds like you want Lake Cahuilla or something similar to it. I went there last year. You don’t need a camper or motorhome, but they do have hookup spots available if you have one. I drove my car in and camped in my tent. You can bring your own firewood for the fire ring and be as rustic as you want to be. It could get crowded as there are a lot of camping spaces (and most camping nowadays is done in a parking lot that’s called a campground anyway), so the intimacy factor may be an issue for you. But check online here: http://www.riversidecountyparks.org/reservations/camping-reservations/
I would stay <20miles inland as i think it will stay pretty hot through the weekend. I am going from San Diego to Laguna Mountains(1 hour) this weekend. There is a trail called Cottonwood Creek Falls. I am hoping that there will still be some clean, running water left so I can jump in. Where is Socal? If you want to get away, go to a National Park where adventure passes for parking are required, that is where the "freedom" is at! Whatever park it is that you decide on, look up what the rules are online and plan accordingly
Lake Hemet, it’s a private not state owned facility in the mountains at cooler temps. Just a short drive into Idyllwild town for fine dining and just down the road from a few beautiful hikes. Fishing is good for cats, bass and trout, it’s been warm so trout have gone deep you may need a boat, they rent them there. Got a kayak? bring it. The campground is a full service campground so if you have an RV full hookups are available as are showers and bathrooms. If no RV set your tent right at shoreline and enjoy fishing all night long, You won’t have somebody else camping right on top of you either. There are lots trees and plenty of shoreline.

A bit of a drive from so cal but worth it is Bishop ca. and June lake loop. Going up 395 into June lake loop is a campground called OH! Ridge. When you go over the ridge and see the view of the Eastern Sierra and the lakes before you you cannot help but say OOOOOHH!
Great fall trout fishing is going on right now along with the fall colors and again just a short drive into town for fine dining.
